It was our last class meeting 😭 this class has been one of my favorite classes at UK and I'm so glad I got to take it my last semester of undergrad. Professor Alvarez, THANK YOU. I hate to admit it, but I am that girl that celebrated her to 21st birthday last year at Mi Pequeña Hacienda in Brannon Crossing. I was sang to, given a shot of tequila, and topped with a sombrero. I found a recipe online for beef enchiladas. The recipe was nothing like the ones I found when doing research for my assignment 2. This one had nasty taco seasoning… Needless to say, I won't be making these again. #mexky #tacoliteracy
